I love fish. So much so that my husband got flagged at the doctors for being endangered of getting gout because we were consuming so much TT_TT So I had to reel it back a bit LOL I'm sorry husband.
I never understood soy sauce hype. I literally didn't have soy sauce (like me using the bottle directly, myself) until I was 16 years old. FISH SAUCE IS SUPERIOR. It's my fave secret ingredient to recipes.
My favorite fish sauce that I grew up with, 3 Prawn Fish Sauce, it's literally $2 a bottle, NEVER OVER PAY FOR IT. TARGET LETTING PEOPLE SELL IT ON THEIR SITE (them and walmart are doing this to compete with Amazon) FOR $20 IS INSANE.
Gentrification took out one of the best thai groceries in the Valley. I don't like the other 2 that are left. 99 Ranch is literally so useless for thai ingredients/ ICE likes to pop up at the one in the Valley a lot T_T aside from the fact that the 99 in the Valley is so mid compared to the ones in 626 (San Gabriel Valley), minus the one in the City of Industry/La Puente (idk where the cities split), that one is so depressing and in need of a huge update.
Salmon Poke
Salmon Poke's been my go to meal for a while since I learned how to make it at home. I don't wanna hear about your fears. Got my salmon frozen and treat it to kill whatever else could be in it still. I got a colonoscopy last December, no secret worms or parasites hiding out up there LMAO

Here's a basic prep recipe for salmon poke you can use w/e fish you want, buy the ones that come frozen. Eat at your own risk, I've eaten so much literal toxic/contaminated foods growing up. My mom is not sanitary and gave me raid chicken once, she didn't wash her hands after using raid. I should be dead.
I use this frozen salmon from Costco:
In a bowl add 4 cups of water & 2 1/2 tbsps of salt. Stir until the salt is fully dissolved. Add your frozen salmon filet and let it it in this for 30 mins to 1 hr. Then take it out, wipe it down. You can slice and eat it right now, or if you want it to be more firm let it sit in the fridge for an hour (this way it'll be more like the texture of poke you get from a restaurant).
My sauce:
1 tsp sesame oil
1 tsp rice vinegar
1 tsp lemon juice
1 tsp ginger paste
2 tsp garlic paste
1 tbsp kewpie mayo
2 soy sauce packets (2-3 tbsp, I just wanna use up packets)
